The panels is more like 5 amp/h x 6 hours / day divided 2 ( mounted horizontal is only around 50 % efficient . May be you need one more

Re the communication options nothing will be better then the isat phone pro ( ssb to expensive to install bad propagation, sail mail is 250 usd per year and you have only one station to connect to so you have to wait....
