I have lost the counting on how many times I've tried to get him writing.
He promised now though that he will get started as soon as he's done with some of the boat projects he's busy with...(so many excuses) there's a lot in his mind that could be fun to read about, he just needs to find a way to get it all out :O let's be patient.

Yes the dress is from Antigua. We will not stay and live here right now, but maybe in the future. We have so much left to see of the world before we want to establish ourselves somewhere. It's great to have found this place though. Loving it here.

Are you making a note of locally made fashion (clothing, hats, shoes, accessories, jewellery other etc), that you think you can sell in Europe? Become the agent for the local manufacturer large or small and market it in Europe if you think it can work.
Likewise Island music, with Alex's expert credentials in that industry.
Might as well keep an eye out for talent in either industry as you roam around the Caribbean.
How was the jerk chicken last night? I live on it. In fact I'm sitting here marinating some :-)
A lot of the islands have got it all wrong. It's of course a Jamaican speciality.
Simplest and most delicious thing to make yourself ever.
Next time in the supermarket there look on the shelf for either WALKERSWOOD or GRACE wet jerk sauce:

Walkerswood is the "original", preferable to anything else, Grace is just as good but has a bit of "sweet" taste to it.
Easiest thing to make. Half a tablespoon of vegetable oil in a big bowl, 1 or 2 tablespoons of either of these sauces, mix up, then 2 or 4 or chicken breasts (skin on bone in best), and with your hands mash it up so they are totally covered. The oil is simply to allow it to stick (it's not 100% necessary you can do it without so long as they are completely coated). Leave out for an hour or if longer in the fridge, mixing up once in a while.
Fire up the bbq, med-high, toss them on and grill bone side down for 10-20 minutes toss over and the breast side for 10 to sear in. Lower the heat and bbq it. If your bbq has a lid close it 3/4's stick the tongs inbetween the lid and box, and lower the temp to low, and "jerk" the chicken for 90 minutes or more.
Be aware, the aroma will have the neighbours creeping or in your case swimming across to see what is going on!
* cooking time as you would do normally for bone in skin on chicken breast on your particular cooking device (nothing special) other than if you have wood or wood chips on a gas bbq, you can jerk it long and slow with the lid closed 3/4's and the heat low (enough to cook slow).
