I tryied to download in HD quality on Vimeo, but it takes too long time to down load. So I just used the lower quality when recording with the camera. Your video looks good enough! No complaine ;-)
Because youtube and other online video sites recompress automatically to lower quality to reduce bandwith consumption.

Your first two videos were uploaded with diferent settins, better resolution (1280x720)and the results were ok, if you use this vimeo guidelines you should get good results even with youtube, with youtube after the upload, you must wait a bit till the video is at the full resolution, also, try to avoid those "strange" formats diferent from 640x480, 720x576 (4:3) or (16:9) 1280x720, 1440x1080, 1920x1080, these free tool gives you good results for convert material http://www.squared5.com/svideo/mpeg-streamclip-mac.html, always use and compress from the original file, avoid recompressing material, that introduces artifacts (large squares), the "wine" issue is only solved with a optical (good) or electronic (not so good) stabilizer, that, I believe your 5D doesn't.
